Medium Bowl:

1 pound skinless, boneless chicken thigh, cut into 

1-inch cubes

1 1/2 teaspoons soy sauce

2 teaspoons dry sherry

¼ teaspoon sugar

¼ teaspoon salt

⅛ teaspoon ground white pepper

1 tablespoon cornstarch 

 

Small Bowl:

1 teaspoon minced garlic

1 teaspoon minced ginger

1 teaspoons soy sauce

¼  teaspoon sugar

 

Wok:

1 tablespoon vegetable oil

add medium bowl mixture

add small bowl mixture

4 small whole shallots, peeled (about ½ cup)

2 carrots 

8-10 Bok Choy

⅓ cup chicken broth

1 scallion, chopped
