Ahi Tuna Poke Bowl
This Ahi Tuna Poke Bowl is a Hawaiian inspired recipe that is easy, delicious and refreshing.
Ingredients
The Tuna:
½ pound of sushi grade tuna, cut into ½ inch cubes
The Marinade:
1/3 cup sliced scallions
¼ cup low sodium soy sauce
2 tablespoon honey
2 teaspoon fresh grated ginger
1 teaspoon rice wine vinegar
1 teaspoon sesame seeds
1 teaspoon sesame oil
½ teaspoon red pepper flakes
½ teaspoon sriracha
The Bowl:
1 cup of rice
1 teaspoon Nori Komi Furikake
4 mini cucumbers, salt
1 avocado
4 tablespoons of mango salsa (Whole Foods)
2 scallions, sliced for garnish
1 teaspoon black sesame seeds, for garnish
Cilantro Microgreens (Whole Foods)
Directions:
The Tuna:
Slice tuna in ½ cubes and sear in pan with a dazzle of oil for only a few seconds so cook the outside but not inside.
In a medium bowl combine tuna, scallions, soy sauce, sesame oil, sesame seeds, rice wine vinegar, honey, ginger, red pepper flakes and sriracha – mix and set aside to marinade.
The Spiral Cucumbers:
Take 2 chop sticks and hold cucumber on cutting board. Cut in 90 degree angle about ¼ inch apart down onto the chop stick. Turn cucumber around and cut in a 45 degree angle down onto the chop sticks. Sprinkle with salt and let sit for 20 min to extract water.
The Sauce:
In a small bowl combine majo and sriracha and a splash of water to thin the mixture – mix and set aside.
The Rice: Cook rice and sprinkle or mix with Nori Komi Furikake, add tuna mix, avocado, mango salsa and drape spiral cucumber in the center of the bow. Drizzle majo, some black sesame seeds and sliced scallions.
