Grilled Chicken Greek Style
Ingredients:
2 large Chicken Breasts or the equivalent, grilled
1/4 cup Olive Oil
1 Onion, diced
5-7 cloves of Garlic, squeezed
1 tablespoon Oregano
1 tablespoon Pepper
1/2 tablespoon Salt
1/2 tablespoon Smoked Paprika
1 tablespoon Sweet Paprika
1 tablespoon Cumin
1 Lemon, squeezed
1 tray (about 10) Cherry Tomatoes
1 tablespoon Honey
3 sprigs fresh Rosemary
1/2 teaspoon Lemon Zest
2 cups of Spring Mix Lettuce
1 cup olives, roughly sliced
1/2 lb Feta Cheese
Directions:
Dice, slice, squeeze all ingredients for the rub into a bowl and mix.
Grill chicken until grill marks establish, it does not need to be cooked through. Transfer into a pyrex dish, cover with rub, add tomatoes cut in half and crumble Feta cheese.
Bake in Oven for about 30 min until Feta cheese gained some color.
Transfer to plate with Spring Mix, added crumble Feta and sliced Onions.
