Madeleines

Let's Make Madeleines! 

Madeleines, (pronounced ma-de-lanes) are bite sized sponge cakes known for their shell shape. A classic French pastry incredibly easy to make & perfectly paired with a cup of coffee. 

Ingredients: 

2/3 Cup flour
1/4 Teaspoon baking powder
1/2 Cup butter, melted and cooled
2 Eggs
1/2 Teaspoon orange zest (or other extract)
2 Packets vanilla sugar
1 Cup powdered sugar

Directions: 

Preheat oven to 350 degrees.

Place butter in a bowl for 5-10 min to melt in pre-heating oven.

Spray pan with Pam or other non-stick spray.

Sift together flower and baking powder in a separate bowl - and set aside.

In a separate bowl, mix together eggs, orange zest and vanilla sugar and beat for about 5 minutes.

Gradually beat in powdered sugar.

Gradually beat in flower mixture.

Gradually beat in melted butter until smooth.

Spoon mixture into forms and bake for about 8 min at 350 degrees, then let cool for about 3 minutes.

Loosen cookie by jiggling then remove from pan and dust with powdered sugar.

Enjoy with your morning coffee.
