Summer Salad With Chicken Breast,
Stuffed with Brie, Apples and Grapefruit
Ingredients:
2 chicken breasts
3/4 slices of Brie
1 apple slices
1 grapefruit, flesh only
4-6 cloves garlic, crushed
1 shallot sliced
8 oz shiitake mushrooms
Ingredients for Salad:
arugula
1/2 red onion sliced
1/2 cup mozzarella balls
4-5 radishes sliced
2-3 cucumbers sliced
olives
olive oil
salt
pepper
Directions:
Slice the chicken breast halfway and stuff with brie, Apple and grapefruit.
Close up with skewers. Place into ovenproof baking dish and add olive oil, sliced shallots and mushrooms.
Bake for 45 min at 400 degrees - 30 covered with aluminum foil and 15 min uncovered. (I like to broil for an additional 2 min).
Prepare the salad and add oil, vinegar, salt and pepper.
Voilà! The easiest and fastest healthy summer dish. ðŸ«
