Seafood Stuffed Calamari Salad
Ingredients:
3 tbsp butter
1 shallot
2 carrots
4 garlic cloves
1 lobster tail, diced
2 cups Patagonian scallops (smaller ones), cut in half
2 squid tubes, diced
1/3 cup cream
1/2 oz dry sherry
1 egg yolk
1 tbsp tomato paste
grated parmesan
salt and pepper
Old Bay Seasoning
1/3 cup cream
Directions:
Heat butter in a large saucepan over medium heat
Add sliced shallot, and cook, stirring often, until softened, 3 to 4 minutes.
Add minced garlic and fine cubed carrots, and cook, stirring often.
Remove Lobster from Shell and cube. Cut scallops in half. Slice & dice squid tubes
Toss lobster, scallops and squid into pan and season with old bay seasoning, salt and pepper and lemon juice and cook until seafood is cooked.
Meanwhile, whisk together cream, egg yolk, sherry and tomato paste.
Add cream mixture to lobster mixture, and cook, stirring constantly, until sauce thickens slightly, 1 to 2 minutes.
Remove from heat and stir in smoked paprika and Parmesan.
Fill a Ziploc bag with the mixture and cut off the cortner. Fill squid tubes with lobster mixture and lay out in oiled baking dish or ramekin.
Preheat oven to 400 and bake for 40 min.
(alternatively, cook in large saucepan in tomato sauce for about 10 min and serve over pasta 😊)
