Lobster Quiche

Quick & Easy Lobster Quiche

Ingredients:
2 small lobster tails
1 pie crust
3 egg whites beaten
1/2 lb cheese shredded (any leftover cheese bits are fine, cheddar and gruyere are a great combo...50/50)
1/4 cup of half and half
3-4 large garlic cloves
2 handful spinach, stems removed and sliced
1/2 dozen cherry tomatoes
salt and pepper to taste - easy on the salt, the cheese may be salty!

Directions:
- roll out pie crust, line oven pan and perforate with fork (to avoid bubbling)

- pre-cook at 375 for 15 min

- remove lobster from shell with spoon, ensure to remove intestines on back of lobster

- slice and pan fry in butter with diced garlic, salt and pepper - set aside

- beat egg whites (only!) until foamy

- add grated cheese(s), sliced spinach, half and half, salt and pepper

- transfer lobster mix to oven pan, add sliced cherry tomatoes cut side up

- bake at 375 for about 20 min or until it is golden brown

Best enjoyed with a glass of red wine.
